Job Title: Assistant General Manager

Summary: This manager effectively is next in line to succeed the General Manager’s position. This person will be expected to stand in for the GM should they be away for any extended period and conceivably will be the next to fill a GM position should it present itself.

  • Writes FOH schedule and submits to General Manager
  • Orders all product for the bar
  • Focus on ensuring quality and cleanliness standards are upheld behind the bar
  • Ensures that all bar equipment is properly maintained and logs kept up with
  • Filters applications and conducts first interviews for all FOH staff
  • Receives order guides from lead kitchen and places all kitchen orders
  • Keeps all order guides organized and on file from past weeks

• Ensures that the food rotation is FIFO.
• Makes sure all orders that come back or if a waiter has a special request that it is done and then checked on.

Job Title: Kitchen Supervisor

Summary: Takes on the role as the acting manager when the Food and Beverage manager is not present.

Essential Duties and Responsibilities: include the following. Other duties may be assigned.

• Assist the kitchen manager with purchasing and receiving.
• Ensures that the orders are properly received and checked in.
• Invoices must be turned in to the kitchen manager.
• Throughout the day he/she will be responsible for quality assurance.
• All orders must meet the Cinebarre standard and be built based on the set specifications for each menu item.
• The food production will be controlled and monitored by this person.
• Monitors labor throughout the day trimming down staff as needed
• Monitors employees hours to ensure a low labor cost for the day
• Assists the kitchen manager with inventory once a week at a set time.
• Counting and data entry.
• Advocates a team environment
• Maintains equipment cleanliness and upkeep.
• Maintains general cleanliness and ensures that Cinebarre workers adhere to proper food handling practices and sanitation guidelines.
• Trains all new employees based on set guidelines for training as set forth in the Cinebarre manual working in tandem with the food/beverage manager.

Job Title: Lead Kitchen

Summary: Lead Kitchen is responsible for maximizing profits and understanding and controlling many factors such as food cost, labor, and productivity. Concerns include constant improving quality of food and service to ensure optimal results. The kitchen manager over sees all kitchen operations, including managing and developing employees.

  • Ensures product consistency through constantly checking recipe adherence.
  • Checks ticket times ensuring all food is promptly made and delivered.
  • Interviews all back of the house hourly employees, ensuring employees hired meet Cinebarre standards.
  • Insures proper staffing levels for the kitchen and shift through tracking labor and maintain a set standard or percentage.
  • Conducts performance reviews on all kitchen employees every six months and provide feedback where necessary
  • Conducts kitchen meeting when necessary to brief employees on new developments.
  • Ensures ongoing development of staff.
  • Enforces uniform standards.
  • Provides direction to employees regarding operational and procedural issues.
  • Attends any food functions outside of the Cinebarre.
  • Conducts performance reviews on all kitchen employees every six months and provide feedback where necessary
  • Ensures food quality by maintaining high levels of cleanliness, organization, storage, and sanitation of food products.
  • Approves all invoices concerning food products.
  • Prepares daily food production and pars as necessary through developing the prep list.
  • Trains employees when new menu items are added through guidelines set by Cinebarre Corporate.
  • Disciplines hourly employees as needed.
  • Reviews and monitors the prep list on a given shift.
  • Sets up and opens the kitchen
  • Ensures the proper breakdown, cleaning, and closing of the kitchen.
  • Performs other duties and responsibilities as assigned
  • Participates in and reinforces importance of all team members recognition programs.
  • Screens, interviews, and recommends candidates for kitchen management positions and hourly employees.

Job Title: Shift Leader
Department: Front of House
Reports To: Front of House Manager

Summary: The shift leader or lead server is generally the first point of contact if a problem arises on the floor; their duty is to asses the situation and notify a manager. Shift lead generally is the closing server and in turn must check out all other servers and determine that their side work is 100% complete.

Essential Duties and Responsibilities:

• Makes sure that all runners and servers are doing their work. This work includes, and is not limited to side work, working quickly, accurately and efficiently while running food.
• The shift leader is the go-to person for waiters when there are any problems with food.
• Works the shift they are scheduled for, and to work the scheduled hours of that shift.
• Sets a good example for other employees, which entails clean appearance (showered, in uniform), positive attitude, and diligent worker. All runners should listen to whatever the shift leader asks them to do, and treat them with respect. As should the shift leader treat co-workers with equal respect.
• Checks out all servers and runners at the end of their shifts to make sure their assigned side work is complete. The shift leader must sign each servers check out report once side work is done.
